This is something I came up with yesterday that turned out to be quite good.
About 6 oz angel hair pasta
1 chicken breast cut into small pieces
half a squash, quartered lengthwise then cut into small pieces
half a zucchini, quartered lengthwise then cut into small pieces
half a large tomato (or a whole small one), roughly chopped
1 tbsp minced garlic
1 tsp lemon juice
third of a stick of butter
half tsp salt
half tsp ground pepper
half tsp mixed dried herbs
1 tsp parsley
Parmesan cheese
On high heat, saute the chicken in about 1 tbsp olive oil for two minutes. Then add the zucchini and sqash, drizzle another tbsp olive oil on top, saute for another three minutes (be sure to stir the chicken and veggies so that they don't burn on one side). Then throw in the tomato and garlic, cover, and let cook for another four minutes, stirring occassionally. Uncover, reduce heat, drain away some of the excess oil, then add butter, lemon juice, salt, pepper, herbs. Stir until butter fully melts (chop it into smaller pieces to speed this up). Oh yeah, and cook the pasta according to directions on package. Angel hair pasta only takes about three minutes to cook, so put it on in a pot of boiling water right before you add the butter to your saute pan (get the water boiling in advance).
Now, divide the pasta onto two plates, then pour the steaming contents of the saute pan on top. Sprinkle with parsley and parmesan cheese, and you're ready to serve!
I hope I'm not forgetting any steps...I'm telling you, it was very good, and definitely more "upscale" than simple pasta and tomato sauce!
