1/4 c Sugar
1 c crushed pineapple
1 c sifted flour
1 c brown sugar
1 c shortning
1 tbsp cornstarch
1 tsp lemon juice
1 tsp salt
2 1/2 c quick oats
Combine sugar and cornstarch in sauce pan. Add pineapple, undrained. Cook on low heat until clear on surface. Add lemon juice. Cool
Sift flour and salt together into large bowl. Mix flour, brown sugar, and oatmeal, using low speed, add shortening. Mix on lowest speed until mixture makes a crumbly mess.
Place half crumb mix in greased, 8x12 baking pan. Pat down. Spread with pineapple mixture. Sprinkle remaining crumb mix over top. Pat smooth.
Bake at 350 for abou 45 minutes. After baking, leave cookies in pan 5 minutes before removing. Cut into bars when cold.
