This is Tim's mom's recipe, and these bars turn out soooo mmmm mmmm good.
Pumpkin Bars
2 c flour
2 tsp baking powder
2 tsp baking soda
ý tsp salt
2 tsp cinnamon
2 c pumpkin
4 eggs
2 c sugar
1 c oil
Chopped nuts (optional)
Sift dry ingredients into mixing bowl. Add beaten eggs, pumpkin, and oil; mix well and add nuts if desired. Bake in two greased 9x13 or one sheet cake pan at 350 for 25 minutes. Sprinkle with powdered sugar or spread cooled cake with cream cheese frosting.
Cream Cheese Frosting
3 oz cream cheese
þ stick margarine
1 Tbsp milk
1 tsp vanilla
2 c powdered sugar
Blend together ingredients and spread on cooled cake. Sprinkle with nuts if desired.
