It's a bit spicier than I wanted, and I'd like to do this again with all fresh ingredients, but.. this is the first time I've tried to make chili.
1 lb. ground beef
2 cans pinto beans, drained and rinsed
1 can diced tomatoes and green chilies
1 can tomato sauce
1/2 cup or so chunky salsa
1 cup diced onion
About 1/4-1/2 cup each diced green and red bell peppers
2 cloves garlic (finely chopped or grated)
2 tsp chili powder
1/2 tsp cumin
Cook and drain the beef. Add the onion, peppers, and garlic, cook a few minutes until they get a bit softer. Add all this into a fairly big pot with the rest of the ingredients, bring to a boil. Reduce heat to low, cover, and simmer 20-25 minutes stirring pretty regularly.
If you like spicy foods, this probably isn't very spicy, but it was a little too much for me. I think next time I'll dice up the tomatoes and chilies separately, and use less chilies.
