my first thought was also that the applesauce would freeze solid. the key then, is timing. if you prepare a little before serving then you can avoid that. mix the applesauce (after its been cooled and then refridgerated.) with the ice cream, put in pie shell then stick back in the freezer 10-15 min or so, just long enough for the ice cream to re-set, but not long enough for the apple sauce to fully freeze. serve with hot caramel generously drizzled on top.
