is that you can cook with residual heat. I've cooked bacon, turned off the coil, and used just the residual heat of the bacon grease, pan, and mostly the coil to scramble a couple of eggs, too!

Of course, gas is cheap enough (relative to electricity) that such techniques don't really gain you any advantage when cooking with gas anyway.
